Sometimes the simplest things in life are the tastiest! You should always use a good quality mozzarella. We used the Ziegler & Brown Triple Grill with optional trivet and pizza stone to cook this one up but you can pop your pizza stone on any BBQ.

01.

Replace the centre grill with the trivet, the side stamped ‘Pizza and Pans’ facing up

Switch on the centre grill to medium and in a fry pan sweat down the onion and garlic with the anchovy, once cooked add the tin tomatoes, cook out for a further 15 minutes. Set aside

Place the pizza stone on top of the trivet, turn on both side burners and set all burners to high. Pre-heat with the hood closed to 200°C

04.

Switch the centre burner off once the temperature is reached

05.

Spread the base with the sauce, evenly place the cheese on the sauce, season and drizzle olive oil all over

06.

Cook on the stone with the hood closed for around 15 minutes until the cheese melts and the base is crispy

07.

Just before serving sprinkle the torn basil leaves on the pizza
